When I first started my blog I was looking for a place to put all my creative energy. Somewhere I could store my veg-tastic recipes. Like this beauty, A New Green Smoothie Bowl. Born out of my latest collaboration, this smoothie bowl is bright, yummy and nutritious.
It’s so easy to forget how far you’ve come when you’re constantly looking forward. Sometimes I get down on myself for not posting as much as I used to around here. But I have to remember how much more is going on in my world compared to when I started. I also never imagined that just a few years later my work would be in magazines, cookbooks, and (in the case of this bad boy) on a restaurant menu!
Earlier this year I was approached by the lovely folks at Three Hands Cafe in Brunswick to create a vegan smoothie bowl for their new menu. A New Green Smoothie Bowl is the result of that collaboration and I couldn’t be happier with it.
Bright, fresh flavours are what this smoothie bowl is all about. What’s more, it’s nourishing and satisfying. The perfect way to start your day.
To celebrate the launch of A New Green Smoothie Bowl at Three Hands Cafe I’m going to share the recipe with you, my plant-based family. A New Green Smoothie Bowl
Serves 1
1/2 an avocado
1 small frozen banana
3/4 cup of baby spinach leaves
1tsp maple syrup
a tbs lemon juice
Topping Suggestion:
fresh strawberries
coconut yogurt
chia seeds
Method:
- Place all your ingredients into a mini food processor and blend on high until you have a smooth and creamy consistency.
- Serve immediately with suggested toppings or your own choice
