Today’s post is gonna be a quick one. It’s the school hols and life’s a bit hectic at the moment but I wanted to stop by and share this delicious Creamy Apple and Spinach Smoothie with you all. Okay, I know what you’re thinking: spinach in a smoothie!?! But hear me out. This smoothie is sweet, creamy, and nourishing and does not taste of grass. I promise. 🙂
The recipe for my Creamy Apple and Spinach Smoothie came about because I had a packet of frozen spinach in the fridge and didn’t know what to do with it. You see, I like cooking shows… (go figure ;-)) Not the competition kind, old-school cooking shows, Nigella, Jamie, Two Greedy Italians and the like. I had been watching Nigella Bites Season 1 on repeat for a little while (thank you YouTube) and stocked my freezer with all of Nigella’s kitchen staples. I’m pretty sure the frozen spinach was a result of this craze (lol).
So, frozen spinach, what do you DO with it? Make smoothies that’s what!
This Creamy Apple and Spinach Smoothie is epic in its deliciousness not to mention packed full of nutrients. What’s more, it makes the perfect breakfast on the run ’cause it’ll keep you satisfied for hours. You see, it’s avocado that gives this bad boy that lovely smoothie texture and the diced green apple it’s sweetness. Totally fab! Creamy Apple and Spinach Smoothie
Serves 1
1/2 cup frozen spinach
1/4 avocado
1 green apple (cored and diced)
1tsp sunflower seeds
1tsp maple syrup
200ml organic apple juice
Method:
- Place your spinach, avocado, apple, sunflower seeds, maple syrup, and half the juice into a magic bullet and blend. You may have to stop and scrape down the edges a couple of times.
- Add the rest of the apple juice and continue to blend until you get a delicious smoothie consistency. Best served chilled.
