We’ve heard it time and time again: Breakfast is the most important meal of the day. For me, that means it’s important that it’s yum, filling, and easy to make. Especially on the weekends when you just want to kick back and take your time with the paper, a strong cup of coffee and a good meal. Luckily there’s my Lazy Weekend Kale and Egg Brekkie. Delicious, sunny side up eggs enveloped in crispy, garlic-y kale. Definitely a dish to take your time with.
I’m pretty full on during the week. Like most everyone else, I have all sorts of obligations and I keep my schedule pretty packed. And yes, I’m one of those annoying people who like to write lists and cross things off as I go (shout-out to all the Virgos in the house 😉 ). Which is why, for just one day on the weekends I don’t want to do anything. Like, I want to stay in my pj’s all day. Maybe throw on a jumper and take the dog for a walk around the block – but that’s about it.
This is one of the reasons I love this Kale and Egg Brekkie so much. It really takes no effort to make but it’s outrageously good. What’s more, it’s just as easy to make for a crowd as it is for one so it’s a great idea for Sunday brunch.
I just love how the kale wilts and becomes deep green in colour when sauteed, then crisps up around the edges while the egg cooks. All you really need is some fresh garlic and olive oil but a pinch of chilli flakes can give this dish a nice little kick if that’s what you like. And sometimes, after a big night out that’s just what you need.

Lazy Weekend Kale and Egg Brekkie
Serves 1
1 good quality free-range egg
2 cups of kale leaves (washed and torn into bite-size pieces)
1 tbs olive oil
2 cloves of garlic (smashed, peeled, and roughly chopped)
a pinch of salt
sourdough toast to serve
Method:
- Gently heat the olive oil in a large pan. One big enough to hold all the kale. Now add your kale and mix it around with a wooden spoon.
- Once the kale starts to wilt add your garlic and cook for about 1 minute.
- Now make a little hole in the center of your pan and crack the egg inside. Fry your egg for around 2 minutes or until done to your liking.
- Season kale and eggs with a little salt. I like to bring the pan to the table and eat it just like that with some sourdough toast and a coffee.
