Crazy Good Kale Chips

Looking for a delicious, salty snack to munch on whilst snuggled on the couch for movie night?  Well look no further than my Crazy Good Kale Chips. Super simple to make and packed full of nutrients, these kale chips are sure to become your go-to snack.

Now, I know what you’re thinking, “Kale chips?” (insert eye-roll here), but hear me out. I too was skeptical of the kale chip.  I mean, when people say, “It tastes just like…” chances are it really doesn’t.

The fact of the matter is, many of us don’t eat enough dark green vegetables. This sucks because dark green veggies are really important for our health.  Kale, for example, is chock full of Vitamins C, A, and B-6.  These nutrients are important not just for vegetarians but for all of us – especially at this time of the year (winter in the southern hemisphere). Kale chips are a great way to introduce this awesome veggie into your diet.

What’s more, kale chips are so easy to make that you can get the kids involved. This is great for fussy eaters. Having them help prepare the food can make them more open to trying it. And they’re not just a great snack.  I will often make a big bowl of kale chips to go with dinner.  Nothing brightens up a plate of meat-and-3-veg (that’s the two meat eaters, not me) like a big bowl of salty kale chips.

Crazy Good Kale Chips

Serves 4-6

1 bunch of green curly kale leaves

2 tbs olive oil

good pinch of salt

Method:

  • Pre-heat your oven to 180C (fan-forced).
  • Remove the kale leaves from their woody stalks using either your hands or a sharp knife and place them in a colander.  Now wash the kale under a cold, running tap.  Make sure you use your hands to separate the leaves to ensure you don’t leave behind any dirt.  Leave the washed kale leaves in the colander (in the sink) to drain for at least 5 minutes.
  • Line an oven tray with baking paper.
  • Put your 2 tbs olive oil into the colander with the washed kale.  Using your hands, massage the kale leaves with the olive oil, making sure they’re evenly covered.
  • Spread the kale leaves out onto the baking tray in a single layer.  You may have to do this step in batches or you could use two baking trays to speed up the process.
  • Sprinkle the salt all over the tray of kale leaves and pop them in the oven.  The kale chips will be ready in around 15 minutes.
