I absolutely adore all the delicious fruit available at this time of year.  One of my favorites is the fabulously orange, sweet and juicy rockmelon.  Now, you could dice it up as part of a fruit salad but why limit yourself?  My Refreshing Rockmelon Smoothie Bowl is fun, energizing, and just a little bonkers – exactly what you need on those hot summer days.

Rockmelon, blue berries, chia seeds, lime, ginger, and pepetiasRockmelon, also known as cantaloupe, is an awesome fruit.  It’s super good for you ’cause of all the Vitamin C and beta carotene whilst also being super yum thanks to it’s mild, sweet flavour.

But here’s the thing: when you blend it up with some fresh ginger and lime juice you have this yummy deeply rich smoothie that’s somehow also refreshing.  It blows my mind how so few ingredients can create such complex flavours.  What’s more, those berries and seeds aren’t just for looks.  They give crunch, substance, and extra nutrition to the smoothie bowl which makes it a perfect light breakfast.

Rockmelon Smoothie Bowl2I just love eating my smoothies in a bowl with a spoon.  Okay, so this isn’t a new thing but it’s new to me.  😉  Besides, a smoothie bowl encourages me to sit down and take my time in the morning, something I don’t always feel I can do.

When making your smoothie bowl a good trick is to mix frozen and fresh rockmelon pieces.  This gives you a much nicer consistency.  But don’t worry, if you’ve got mad cravings for this bowl of goodness just fresh rockmelon works too.

This Refreshing Rockmelon Smoothie Bowl is a real winner at my house.  Even the kid likes it.  He’s all like, “Why are you giving me dessert for breakfast?”  (lol)  I’d love to know what you think.  Give it a go and hit me up in the comments with your thoughts.

Refreshing Rockmelon Smoothie Bowl

Serves 1

For the smoothie:

2 cups rockmelon (pieces cubed, both frozen and fresh)

the juice of 1/2 a lime

a small knob of ginger (about the size of your thumb)

To go on top of the smoothie bowl:

1/4 cup fresh blueberries

1 tbs pepitas

1 tsp chia seeds

Method:

  • Place your rockmelon, lime juice, and ginger into a blender or magic bullet and blend until smooth.
  • Transfer to a small bowl and top with the blueberries, pepitas, and chia seeds.
