Super Simple Almond Butter

In my opinion, Almond Butter is a vegetarian’s best friend. It’s simple to make, totally nutritious and amazingly versatile.  You can use my Super Simple Almond Butter to make sweets, smoothies, salad dressing, sandwiches, I mean I could go on but I think you get the picture… 🙂

Bowl of roasted almondsAlmonds are high in protein and those good fats that make your skin glow and your tummy feel full.  And while you could buy a jar of almond butter from the store it’s much cheaper and better for the environment if you make it yourself.  Anyhow, I don’t know about you but I feel like a boss when I can make something so totally rad from scratch.

Roasted almonds in a food processorNow, don’t tell anyone 😉 but the secret to a fab jar of homemade Almond Butter is patience.

Almond Butter stage 1By which I mean, the almonds go through several different stages on the way to creamy yumness (is that a word? It is now, lol).

Almond Butter stage 2Your Almond Butter will start off crumbly, then become kind of a moist crumble, then sticky…

Almond Butter stage 3Until finally you have a delicious creamy, buttery consistency.  So be patient.  It can be tempting to stop at sticky.  I know when I first started making Almond Butter I did this and would wonder why it didn’t look like the stuff from the store. Just remember to scrape down the sides and keep blending until the mixture becomes smooth and buttery.

And there you have it.  I didn’t name it my Super Simple Almond Butter for nothing!  What’s more, if you store it in a clean glass jar in the fridge it will last you weeks.  So make sure you have a go at some homemade Almond Butter and let me know your thoughts in the comments below.  I’d love to hear how you like to serve yours. Super Simple Almond Butter

Make 1 small jar full

2 cups roasted almonds

Method:

  • Place the almonds into a mini food processor and blend on high until you have a smooth, creamy consistency.  Around 7 minutes or so.
  • You will have to stop the processor periodically and scrape down the sides with a spatula.
  • Store in a clean glass jar in the fridge.
