This simple, nourishing and light salad is great to serve at BBQ s or large gatherings. Bursting with flavour and wonderfully colourful, my Super Simple Coleslaw is guaranteed to please a crowd.
This salad is rustic home-cooking at it’s best. It’s actually my mum’s recipe and one of the very first dishes I mastered when I began cooking for myself. In fact, when I decided to share this dish with you all I realised had to teach myself the measurements. After all, my mum’s instructions consisted of, “A little bit of this and a little of that”.
My Super Simple Coleslaw is great for BBQ s or tacos, picnics and cookouts. I also love to use it in wraps alongside some steamed broccoli and hummus. It’s so yummy. What’s more it’s really good for you, no heavy creamy dressings. Just light, bright, scrumptious food. Give it a go and let me know what you think. Super Simple Coleslaw
Serves 4 as a side
1/2 head of white cabbage (small/medium in size, finely shredded)
1/4 red cabbage (finely shredded)
1/2 red onion (thinly sliced)
2 sticks of celery (washed and sliced)
1 large carrot (peeled and grated)
1 tbs olive oil
2 tbs malt vinegar
1-2 tsp salt
Method:
- Combine all your veggies in a large glass mixing bowl.
- Pour your olive oil, then the vinegar, then the salt over the vegetables and stir with a fork (or mix with clean hands) to combine.
- Have a taste, add more vinegar or salt if you think it needs. Keep in mind that the flavours will become more pronounced after the salad has rested for about 5 minutes. The end result is supposed to be quite zingy.
