It’s finally here you guys!  I’m super excited to share with you an awesome project from my dear friends Mandy and Andrew over at Spud Fit.  A wholefood, plant-based cookbook dedicated to the world’s favorite comfort food – the humble spud.  The Spud Fit Cookbook is packed full of mouthwatering recipes with easy to follow instructions.  Honestly, you won’t believe how versatile potatoes can be.

In 2016 Andrew Taylor’s story went viral all over the world when he ate nothing but potatoes for the entire year.  Andrew lost over 55kg (120lbs) and regained his health and love of life.

What I love about The Spud Fit Cookbook is, it’s not just recipes.  It documents a very specific experience enabled by the humble spud.  What’s more, Andrew writes with humor, mindfulness, and a good dose of self-awareness.

Where his journey could be written off as a fad or ploy for 15 minutes of fame, what you discover is the honest tale of a person trying to be kind to themselves and live their best life.  All this alongside some super yum plant-based recipes.

To create this unique cooking reference, Andrew enlisted the help of some amazing people he met during his potato-eating adventure. I’m talking health professionals, athletes, and chefs.  These cats know their way around a kitchen and for that matter, a potato. 🙂
