Happy 2019 everyone! 😸✨ After spending the last couple of weeks over-indulging, it’s nice to press “reset” with a vegan smoothie. My absolute favorite at the moment is this Vegan Blueberry and Banana Smoothie. This smoothie is packed full of antioxidants and plant based nourishment. Just the thing to get you going in the New Year.
This is not an over-complicated recipe which, let’s be honest, is always my jam. The thing is, cooking that requires no thought is about all I can muster at the moment. (lol)
The secret to an impossibly creamy vegan smoothie is frozen banana. Also, I just love the combination of tart blueberries and maple syrup.
Another cool thing about this smoothie is the plant-based goodness gives my body a nice break whilst also satisfying my hunger with all that slow-burning energy.
I made sure to freeze portions of sliced banana and bought several punnets of blueberries in preparation for my Vegan Smoothie week. That way I don’t have to think about any of it. Just chuck it all in the blender and press “Start”.
And please remember you don’t have to be a veggie to enjoy this smoothie, I promise. I have served it up to kids, meat-eaters, and general skeptics – they all love it! My Vegan Blueberry and Banana Smoothie really is so yummy. Give it a go and let me know what you think.
Vegan Blueberry and Banana Smoothie
Serves 1
1/2 large banana (sliced, frozen)
1/2 cup blueberries (washed)
200ml rice milk (or plant-based milk of your choice)
1 tbs maple syrup
Method:
- Place all your ingredients into a blender and mix on high until well combined.
