Vegan Plum Porridge

I am obsessed with porridge at the moment.  Firstly, I love how something as simple and inexpensive as oats can create an abundance of nourishment.  On top of that, it’s just so incredibly versatile.  You can have a bowl of porridge every day and never get bored.  I mean, the flavour combos are endless.  Take my Vegan Plum and Coconut Porridge for example. A scrumptious mix of nutty and sweet, crunchy and smooth, this bad boy is nourishing, easy to make, and super tasty.  Yes please!

Now, I’m not vegan but I really enjoy using plant-based milk in my cooking.  Cow’s milk has never really agreed with me so I’ve pretty much always stayed away from it (you can ask my mum 😉 ).  The good news is, there are so many great plant-based choices out there. Just make sure you choose one that’s fortified with all the good stuff.  My go-to has to be rice milk but you can use whichever plant-based milk you like.

This brekkie is packed full of protein, vitamins, calcium, and slow burning energy – the perfect start to anyone’s day be they veggie or not.  What’s more, my Vegan Plum and Coconut Porridge is totally delicious.  It’s so creamy and sweet that it almost feels like you’re having pudding not a nutritious breakfast!

Vegan Plum and Coconut Porridge

Serves 1

1/3 cup rolled oats

1 cup rice milk (or plant-based milk of your choice)

1 small plum (stone removed and thinly sliced)

1/2 tbs cashew butter (find recipe here)

1 tsp pepitas

1/2 tsp chia seeds

1 tsp shredded coconut

1-2 tsp maple syrup

Method:

  • Combine the oats and rice milk in a small saucepan and place them on the stove – medium heat.
  • Bring the mixture to the boil then reduce to a simmer.  Your porridge is ready when the oats have softened and absorbed most of the milk, around 7 – 10 minutes.
  • Transfer porridge to a bowl and top with the sliced plums, cashew butter, pepitas, chia seeds, and coconut.
  • Finish with a drizzle of maple syrup
