What’s Cooking?  Apparently, quite a lot.   Things have been pretty hectic around here lately.  Work, the kid, the blog, and life in general have been consuming me at the moment. It’s because of this that I haven’t had a chance to visit my favorite veggie blogs to see what’s up.  When I finally got around to it the other night I was so excited by all the yumminess.  The following are some of the veggie recipes I’m diggin’ from around the web.

The following recipe is a healthy, gluten-free twist on an old breakfast favorite.  Although the finished product looks fancy It’s really easy to make using ingredients most of us have lying around the pantry.  What’s more, you’re given an alternative cooking method if you don’t posses a certain cooking gadget.  I am definitely going to give these a try this weekend.  (Cookie and Kate)

 

This green veggie has become an absolute hero in my house since becoming a vegetarian.  Packed full of all sorts of goodness it’s an indispensable part of a veggie diet.  Although I mostly just steam this sucker, the following recipe looks like a great way to mix it up.  I think maybe for when I have company and I want the greens to look a little more luxe.  (Vegetarian Ventures)

 

I have certain people in my life who will swear up and down they dislike a particular vegetable.  What makes me giggle is when they then eat a whole bowl (without even realising it) of said veggie served up the following way.  But seriously, I firmly believe you can never have too many variations of this dish.  It’s super easy to make, and a brilliant accompaniment to so many different things.  (Green Kitchen Stories)

 

Beautiful, bright colours and a harmonious combination of flavours and textures.  This next dish has all of that in spades.  Although one of the ingredients is now out of season, I love the feeling of summer this dish conjures up for me.  I can look at it and remember how I was swimming in the bay just last weekend (I live in Melbourne, remember?  Four seasons in one day. 🙂 ).  (Blissful Basil)
