One of my favorite things about being a vegetarian is feeding people who are not.  The look of surprise on their faces never gets old.  I love it when they realise that, a)  they’re not going to go hungry, and b) the meal is going to be really yummy.  Whilst I love to create my own dishes from scratch sometimes I need a little extra inspiration.  With so many innovative vegetarian blogs around it’s easy to find the perfect dish for that special occasion.  Here’s what I’m diggin’ at the moment.

 

I’m always looking for ways to use this ancient grain.  The following dish is colourful, nourishing, and super easy to throw together.  Not only would it work well as a side at a dinner party, but it could do double duty as a packed lunch for the next few days at work.  At least, that’s what I’m planning on doing with it.  (Blissful Basil)

 

This next veg has been given a new lease on life through simply being prepared in a different way.  Add warm, earthy spices and some nuts and you’ve got a comforting dish that is the perfect thing to make next time friends come ’round or a quiet dinner on the couch watching a movie.  (Love and Lemons)

 

Okay, I confess: It was the amazing colours and the unusual mix of ingredients of this next dish that got me.  It’s the type of recipe I sometimes look at and think,  “I could have totally come up with this myself if I was a little cooler.” Lucky for me, the guys who run the following blog are happy to share their cool ideas.  (Green Kitchen Stories)

 

The snack isle at the supermarket is enormous these days.  You can get pretty much anything pre-packaged if you look hard enough.   Having said that, you can’t go past a homemade treat.  Especially one that’s crispy and chocolatey.  The following recipe is a modern, healthy take on something many of us grew up eating. This is definitely a weekend afternoon project for me and the kid.  (My New Roots)
