A good, tasty salad doesn’t have to be complicated or fussy. That’s why I love my Fresh Butter Bean Salad so much. You only need a handful of ingredients to create this bright deliciousness. I’m so excited I finally get to share this bad boy with you today!
There were a lot of butter beans at my place growing up. Mostly in stews with lots of paprika. Not going to lie… I didn’t like them much. But since becoming a vegetarian I’ve revisited a lot of veggies I used to think I hated and you want to know something? None of them are as bad as I remembered. In fact, they’re all bloody delicious! It’s all in the execution, isn’t it?
Of course, it helps when you have the yummiest dressing around to drizzle on top. A new green dressing is the perfect accompaniment to the paired back ingredients of this dish. My dressing brings bright, light and fresh flavours to the butter beans making them extra scrumptious. What’s not to love?
I tell you, my Fresh Butter Bean Salad is sure to become one of your go-to’s when you need to bring a plate to a pot-luck, picnic or BBQ. I also love it as a packed lunch. However you serve it just make sure you do.
Fresh Butter Bean Salad
Serves 4 as a side
1 tin of butter beans (drained and rinsed)
1 red capsicum (bell pepper), deseeded, and diced
Half a red onion (diced)
2 good handfuls of flat leaf parsley (roughly chopped)
a little cracked pepper
1/4 cup of a new green dressing
Method:
- Combine all the ingredients bar the dressing in a large mixing bowl and gently stir.
- Right before serving, transfer the salad to a serving platter and drizzle over the dressing then finish with a few good twists of cracked pepper
