One of the things I love about home cooking is when an off-the-cuff dish turns into an absolute winner. Case in point: my Sensational Spinach Pea and Rocket Salad. Bursting with flavour, pretty to look at, and oh-so-easy to throw together this salad is a must at your next picnic, BBQ, or potluck.
It’s no secret that I love me some frozen peas. I dedicated a whole post to them on Instagram. But did you know that one of my favorite ways to dish these bad boys up was on a salad?
This Spinach Pea and Rocket Salad came about because I was standing in front of the fridge wondering what I should make for lunch. As usual I found a whole heap of bits and bobs that had to be eaten:
- half a cucumber,
- peas left over from the last night’s power bowl
- half finished packets of spinach and rocket leaves… you get the picture
All that was left to do was decide which nuts to sprinkle on top (pine nuts were the winner) and what kind of dressing might fit the combo.
I went with my Creamy Tahini Dressing because all the other components felt quite light. The result was a delicious fresh, simple salad that was an absolute lunchtime winner!
Keep in mind that this salad is best thrown together right before serving. Just make sure you do. Serve it. And eat it. It’s totally divine!

Sensational Spinach Pea and Rocket Salad
Serves 4
1 cup frozen peas (thawed)
a medium Lebanese cucumber (washed and diced)
1/3 cup pine nuts (lightly toasted)
200g pack baby spinach leaves
200g pack baby rocket leaves
1/4 cup Creamy Tahini Dressing
Method:
- Using either a large serving platter or 4 salad bowls, arrange your spinach and rocket leaves first
- Next comes the diced cucumber, the frozen peas, and the toasted pine nuts
- You can either take the dressing to the table and let everyone help themselves or drizzle it over the salad right before serving
