French lentils are a part of the green lentil family. They’re packed full of protein and fiber not to mention complex carbohydrates. I’m talking all the good stuff.
Aside from this, I love them because they hold their shape really well. Which means they’re perfect in salads and power bowls or as a side dish.
My approach to food has always been, “Keep it simple but make it yummy”. And for me my Basic French Lentils recipe does exactly that. Why not give them a go?

Basic French Lentils
Makes around 2 cups
1 cup french style lentils
3 cups vegetable stock
1 carrot (washed and chopped into chunks)
2 cloves of garlic
1 small brown onion (peeled and quartered)
Method:
- To start with, give your french lentils a good rinse under cold water and pick over to remove any discoloured lentils.
- Pop them in a medium/large pot with the carrots, onion, garlic, and vegetable stock and bring to the boil.
- Reduce heat to a simmer and cook for around 20 minutes or until your lentils are tender. You might need to skim the surface a couple of times.
- Once the lentils are cooked drain them of the cooking water and remove the veggies. Can be stored in the fridge for around 2-3 days in an air-tight container.
