The idea for these scrumptious Black Bean Veggie “Meatballs” came to me by accident. The kid had a hankering for spaghetti and meatballs and I had some cooked black beans in the fridge. So, I did what any self-respecting home cook would do, I threw in a little bit of this and a pinch of that and voila! my veggie meatballs were born.
Burrito bowls are the best weeknight or meatless Monday veggie option. I think it’s because they’re super quick to throw together, whist also being nourishing and delicious. I know it’s my second post about chickpeas in as many weeks but I just had to share this recipe with you all. This is one of my absolute favorite ways to cook chickpeas. What’s more, with everyone meal-prepping at the moment this dish would be a great addition to your menu.
