I came across Caponata when I was going through my Italian cooking phase.  And let me tell you, I still love to cook with Italian flavours but I. Was. Obsessed.  Here’s me, borrowing every Italian cook book from  the library I could find.  Watching endless YouTube videos of Italian mammas cooking authentic dishes (in Italian I might add).  I just couldn’t get enough.

One of the reasons I really love Italian cooking, aside from the taste, is how forgiving the recipes are.  You really can’t go wrong.  This was music to my ears, novice home cook that I was.

I have a confession to make.

I used to be judge-y about brown rice.  In fact, the mere mention of brown rice was enough to make me cringe.   Everywhere I looked people were swapping white rice for brown. “What’s wrong with white rice?  The Japanese have been eating it for centuries,”  I would wonder. I thought it was just another trend and that people would eventually come to their senses.  Plus, I’d heard it tasted horrible.

How wrong I was.  About all of it.  Brown rice has a delicious nutty flavour that tastes great warm or cold. It is also easy to prepare and incredibly nourishing.  What’s not to love?

Anyone who knows me knows that pasta is my favorite food in the whole world.  I could eat pasta in one form or another for breakfast, lunch and dinner.  Pasta is the first thing I will order when we go out to eat and is what I cook for myself when I’m home alone.

Pasta is comforting, nourishing and incredibly versatile.  Case in point, my Penne with Feta and Broccoli.  This dish is anything but traditional by Italian standards, but it’s yummy, super simple to throw together and a complete meal in one bowl.  Yes please! Veggie Bolognese

Every family has their own version of spaghetti bolognese.  Growing up, this dish was a once a week staple in our household.  When I moved out of home and was learning to cook for myself, spaghetti bolognese was one of the first dishes I mastered.  I have always loved how inexpensive and easy it is to make.

Vegetarians need not miss out on this family favorite.  In fact, my Super Tasty Veggie Bolognese ticks all the boxes.  Believe it or not, my dedicated meat eaters actually prefer this version to the traditional.
