Introducing my Maple Roasted Brussels Sprouts! In my experience, Brussels sprouts often get a bad wrap. Check out any kids movie or book and you’ll be sure to find some child wincing at the sight of them or secretly trying to feed them to the dog. I mean, I was reading a book of short stories to the kid once and there was an entire story devoted to the avoidance of these little green gems. Truthfully, it was really funny but that’s besides the point. Brussels sprouts are not the enemy people! In fact, I’d like to think they’re the unsung hero of the veggie world… too far? 🙂
I reckon the secret to delicious Brussels sprouts lies in how they’re cooked. Most people have only ever tried the boiled variety. And while this method can have it’s place, it’s a pretty unimaginative way of cooking them.
When I’m not too fond of a particular veg or unsure of what to do with it I like to use the roasting method, see how it turns out. Believe it or not, I’m yet to find a veg that doesn’t improve in texture, taste, or awesomeness after a roasting: and Brussels sprouts are no exception.
Salty, sweet, and crispy on the outside, these Maple Roasted Brussels Sprouts make an awesome side dish. They’re super easy to prepare and involve hardly any ingredients. It’s all about letting the veggie shine in this dish.
And just as well ’cause Brussels sprouts are choc-full of nutrients. They’re high in Vitamin C, fiber, and a host of other goodies. Trust me, you need more of this gemmifera veg in your life.

Maple Roasted Brussels Sprouts
Serves 4 as a side dish
400g Brussels sprouts (washed and cut into halves)
1 tbs maple syrup
1tbs olive oil
salt and pepper to taste
Method:
- Preheat your oven to 200C (fan forced). Line an oven tray with baking paper.
- Toss the Brussels sprouts in the olive oil then spread them out evenly on the oven tray, cut side down.
- Drizzle with maple syrup and sprinkle over your salt and pepper.
- Pop the tray in the oven for around 20 minutes or until your Brussels sprouts are golden and crispy on the outside.
