I know a lot of you are thinking about soup at the moment.  It’s cold and wet out and we all want a meal that’s comforting, nourishing, and cheap to make.  That’s why I thought I’d dedicate this week’s post to some soup inspiration. Just like the Pea Soup pictured above each of the following is super easy to throw together and freezes well so you can have a warming bowl of soup whenever you please. So let get to it!

This soup is choc full of nutrients, making it the perfect vitamin booster this winter. The sweetness of the roasted carrots paired with the warm spiciness of the fresh ginger make my tummy and my taste-buds happy. Top it off with roasted cauliflower, pepitas and chickpeas and you’ve got yourself a nourishing and filling meal.

Okay, so it’s not leek season around here at the moment, but it’s not winter everywhere in the world right now.  🙂

Sweet and mild in flavour when cooked, leeks are the perfect veggie to soupify (yes I just made that up). Combine them with chickpeas and veggie stock and you’ve got yourself a delicious, nourishing meal that will feed a whole army or provide you with a wholesome quick meal for weeks to come if you batch freeze.
