Simple Smashed Avo on Toast

When you enjoy cooking there are certain things you take for granted.  Like how to cook rice or even avocado toast.  I mean, anyone can spread some avo on a piece of toasted bread. But there are a couple of extra steps you can take to make it taste truly scrumptious. My Simple Smashed Avo on Toast is going to knock your socks off!

Inside a ripe avocadoIt’s no secret that I wasn’t really a fan of avocado before I went veggie.  I know, shocking right?  Doesn’t everyone like avocado?  I guess I wasn’t a fan of the texture and always found it kind of bland.

Diced avocado with lemon juice and saltBut since I stopped using animal products for my fat content (I’m looking at you, butter) I began to develop a newfound appreciation for this creamy green tropical fruit.

Mashing the avocado ready to spread on some toastThe more time I spend in the kitchen the more I’ve come to realise the secret to delicious food is layering flavours and textures. Spreading some plain avocado on a piece of white bread isn’t very exciting.  But toast a piece of dense bread like sourdough, and combine flavours like garlic, lemon, and chilli and you’ve really got something. What’s more, not only are all those flavours best friends, when combined, they’re also super nutritious.

Simple Smashed Avo on Toast

Serves 2

2 large slices of sourdough bread

1 ripe avocado

1 fat clove of garlic (peeled and the end cut off)

the juice and zest of half a lemon

a pinch of salt

1 tsp dried chilli flakes

Method:

  • Pop your bread in a toaster or under a hot grill.
  • Cut your avocado in half, remove the stone in the centre and scoop out the flesh into a clean glass bowl.
  • Add the salt, lemon juice and zest to the avocado and, using the back of a fork, mash until you reach your desired consistency.  I like to leave mine a little lumpy.
  • When the toast is ready grab your garlic and rub both slices generously. This will give the toast a lovely subtle garlic vibe.
  • Pile each slice with the mashed avocado and sprinkle with the chilli flakes to finish. Serve immediately.
