Smashed Peas

My quick and easy Smashed Peas are nutritious and super yum.  They’re perfect as a dip for when friends come around or spread on your toast for a scrumptious savory brunch.  You just won’t believe how easy it is to make such a delicious spread!

Frozen peasI love frozen peas.  They’re the ultimate home-cooking life saver.  They’re cheap and last for ages in the freezer.  Plus, you can make any number of dishes with them:

  • Soups
  • Salads
  • Stir-fry
  • Sides for a  roast dinner

What’s more, peas are packed full of plant-based protein making them a vegetarian’s best friend!

Roasted garlicMy recipe for Smashed Peas came about by accident really.  I was craving something substantial for brekkie one Saturday morning and decided peas on toast was the way to go.

Cracked pepper, olive oil, saltGive my Smashed Peas a go this week and let me know what you think.  They really are simple and delicious!

 

Smashed Peas

Makes around 2 cups

2 cups of frozen peas

1 clove of garlic

1tbs olive oil

a pinch of salt

some cracked pepper (optional)

Method:

  • Start by turning your oven on to 200C.  Place your garlic (skin on) in a small piece of foil and drizzle with a drop of olive oil.  Wrap your garlic in the foil and pop it in the oven for around 15 minutes.  Remove and set aside
  • While your garlic is in the oven, put a pot of water on to boil (about 3 cups)
  • When the water has come to a rolling boil add your peas and let them cook for around 3-4 minutes
  • Drain your peas, keep aside some of the cooking water
  • Place peas, garlic (squeeze it out of it’s skin), salt and olive oil into a mini food processor and blitz on high until you have a smooth paste or to your desired consistency. You can leave it a litttle chunky if you like.
  • If the mixture isn’t quite smooth or blended enough then add some of the cooking water and blitz again
  • Best consumed straight away or within a few hours.

Note: I like to serve my Smashed Peas with some roughly chopped almonds and chilli flakes sprinkled on top.  Yes it looks pretty but it’s also hella tasty!
