Creamy Tahini Dressing

For the second instalment of my Salad Dressing series I thought I’d dive right in with one of my all-time favs.  This Creamy Tahini Dressing is versatile and so, so yum.  Perfect for drizzling over your salad or roast veggies.  Having said that, this velvety condiment isn’t just about flavor, it’s actually super nourishing too!

Tablespoon of tahini paste

Tahini is a paste made from toasted sesame seeds.  Popular in Eastern Mediterranean cuisine (think hummus) it’s super high in those lovely good fats as well as calcium and protein.  This makes tahini a great addition to any vegan or vegetarian diet.

Sea salt, pepper corns, apple cider vinegar, and olive oilOn it’s own however, tahini can be a little intense.  It’s definitely one of those ingredients that works best when you combine it with other things.  Like apple cider vinegar for example.

Not only does bright apple cider vinegar cut through the richness of the tahini, it’s got some super powers of its own.  Did you know that apple cider vinegar is really good for your digestive system?  So, protein, calcium, good fats, and a happy gut…  And you thought this was just a post about salad dressing. 😉

Combined with salt, pepper, and olive oil you’ve got yourself a harmonious, creamy, delicious dressing you will think tastes way too good to be good for you.

Creamy Tahini Dressing

Makes around 1/2 cup

2-3 tsp tahini paste

1 tbs olive oil

1-2 tbs apple cider vinegar

1 tsp salt

1 tsp pepper

Method:

  • In a small, clean glass jar combine your olive oil, apple cider vinegar, salt and pepper.  You can either use a little whisk to mix it all together or pop the lid on the jar and give it a really good shake.  Now have a taste.  Does it need more salt, pepper, or vinegar?  If so, add it now.

Note: you want it to taste quite tart and salty at this stage otherwise the flavour of the tahini will dominate.  Also, I add my tahini paste right at the end, after I’ve adjusted for seasoning otherwise the mixture tends to separate.  Still tastes great but doesn’t look so good.

  • Now add your tahini paste.  First add 2 tsp, give it a mix then have a taste.  Is it creamy enough?  If you want a bigger hit of tahini then add the next spoon otherwise you can leave it as is.
  • Store in the fridge in a clean glass jar.  Last around 4-5 days.
