Vegan Ranch Dressing

What’s herby and creamy and goes with pretty much any veg you can think of?  If you guessed my Vegan Ranch Dressing you were right!

Dried dill, lemon wedges, raw cashews, flat leaf parsley, a clove of garlic, salt and pepperRanch dressing is an American condiment that isn’t all that common here in Australia. I guess you can describe it as a kind of herby mayonnaise.

You can use my Vegan Ranch Dressing:

  • in a sandwich
  • on a burger
  • as a dip with veggie sticks
  • drizzled over a simple green salad
  • in a wrap with some roasted veg
  • In a bagel with some avocado and kale

Vegan Ranch Dressing, serving suggestionWhat I love most about this dressing is it’s dairy and gluten-free yet packed full of flavour!  It’s also really easy to make. But don’t just take my word for it.  Give it a go and let me know what you think.

Vegan Ranch Dressing

Makes about 1 cup

1 cup raw cashews (soaked in boiling water for around 1 hour)

the juice of 1 lemon

a clove of garlic

1 heaped tsp Dijon mustard

1/4 cup apple cider vinegar

a good handful of fresh, flat leaf parsley

1 tsp dried dill

a cup of water

salt and pepper to taste

Method:

  • Drain the cashews of the soaking water.
  • Put them in a food processor with everything but the fresh water.  Pulse a few times to break everything down.
  • Now, gradually add your water until you achieve a thick creamy consistency.
  • Can be stored in the fridge in a clean glass jar for around 5 days.
