Hold on to your hats friends, because this dressing is a game-changer! I call it a new green dressing because I think it sums up what I’m all about. Fresh, vibrant flavours that are easy to whip up at home. That’s what you’ll get with this green yumness. I dollop it on almost everything and I promise once you’ve tried it you will too.

- sandwiches or wraps
- veggie sticks as a killer dip
You get the picture. I always keep a jarful in the fridge to brighten up a meal. All it takes is a few simple ingredients and you’ve got a dressing bursting with flavour and packed full of nutrients.
This dressing gives you the best warm, nutty vibes thanks to the toasted pepitas. Toasting pepitas changes their texture and brings out a delicious, almost honey-like sweetness. So good!

a new green dressing
a fresh bunch of Italian/continental parsley
3/4 cup pepitas (lightly toasted on a dry pan)
a small clove of garlic (peeled)
1/4 cup apple cider vinegar
3 tbs olive oil
a dash (1/2 tsp) of maple syrup
salt and pepper to taste
filtered water (to get the right consistency, 1-2 tbs at a time)
Method:
- Put everything but the filtered water into a small food processor and blitz on high until the ingredients are combined. Scraping down the sides as needed.
- Add 1 – 2 tbs of filtered water at a time and blitz again until you reach your desired consistency. You can make it thicker or runnier depending on what you’re using it for i.e. runnier for a salad or thicker if you’re putting it on your veggie burger.
- Be sure to check for seasoning each time you add/mix in some water as this can dilute the flavours a little.
- Will keep in the fridge in a clean glass jar for around a week.
