Lemon Dressing

Dressing – it’s such a simple step that can elevate a salad or veg to next level yum.  The thing is, for so many of us it’s often an afterthought.  It’s such a shame that so much time and effort is put into buying fresh, seasonal produce only for it to be doused in sub-par, store bought dressing.  No more I say!  You can make you’re own dressing.  And it will taste better and be better for you than the alternative.  So, with that in mind today’s post is the first in a series I’ll be doing on the humble salad dressing.  My Lovely Lemon Dressing is bright, light, and incredibly simple to make.  Let’s get cracking!

This Lovely Lemon Dressing is a no-brainer really.  Anyone who grew up in a Mediterranean household probably main-lined the stuff (that would include me) which is why it’s easy to overlook.  It runs the risk of not being post worthy because of its simplicity.

In my opinion, it’s basic nature is precisely why this Lovely Lemon Dressing deserves its own blog post.  It’s a building block to great food and a confident home cook.

When I was finding my feet in the kitchen it was recipes like this one that gave me confidence in my abilities.   What’s more, they got me excited about food – something I’ve always had a complicated relationship with.

So, why should you make your own dressing when you can just buy it?  First and foremost it’s the taste.  Homemade salad dressing simply tastes like, 1000% better than anything you can buy in the store.  Secondly, it’s better for you because you can control the integrity of your ingredients, not to mention the amount of salt that goes in.

Your mission this week, should you choose to accept it 😉 is to make a jar of my Lovely Lemon Dressing and use it on your garden salad, rocket, or baby spinach.  You don’t need too much, but you simply must give it a go and report back.  I just know you’re going to love it. xx

Lovely Lemon Dressing

Makes around 1/2 cup

the juice of 1 medium-sized lemon

2 tbs good quality olive oil

salt and pepper to taste

Method:

  • Combine all ingredients in a small clean glass jar.  Be sure to start with just a small amount of salt and pepper.  (You can always add more later but you can’t take it out.)
  • Using either a small whisk or by placing the lid on the jar, mix ingredients together.  Now have a taste, does it need more salt or pepper?  If so, add some more now, give it a mix and have another taste.
  • The Lovely Lemon Dressing is ready when you’re happy with how it tastes!  It’s that simple.  Will keep in the fridge for around 3-4 days.

Note: Don’t worry too much if you find the lemon taste too strong when testing your dressing.  It mellows when you add it to your salad.
