It can be tricky sometimes as a vegetarian living with a couple of meat eaters.  The dilemma I often face is, how do I feed my family as well as myself without having to cook two completely different meals? I find the best way around this is by being prepared.  As long as I’ve got a variety of nuts in the pantry, a packet of leafy greens and a jar of previously made dressing in the fridge I’m good to go.  In fact, that’s exactly how my Rainbow Salad Bowl with Green Goddess Dressing came to be.

My journey as a vegetarian began organically.  I had started making salads for lunch and was looking for ways to mix things up.  I wanted more variety than I was able to create so I went online.

It’s freezing cold in my part of the world at the moment.  While I have come to appreciate the contrast of the seasons, there are others in my crew who don’t. It is for this reason we are making our annual pilgrimage up north to escape the cold.

Whilst most people would be doing a happy dance at the prospect of a tropical holiday, I secretly feel anxious (don’t tell anyone).   Do you ever get that sinking feeling like you’re going to miss the plane?  Well I have this for a whole week leading up to the trip.  Even though we’re traveling domestically, I like to get to the airport 2 hours early just in case.  Just in case of what I’m not really sure…

My favorite thing to eat for lunch is a salad.  I love how a salad can take so many different forms.   This Roasted Sweet Potato salad is super yummy and filling.  The combination of the crunchy lettuce, red onion and caramelised sweet potato is just delicious.
