Ginger Bites

These Ginger Bites are absolutely delicious. So good with a cuppa or as a quick treat.  I swear, these super yum little bites have saved me on more than one occasion. The perfect snack for when you want something sweet without all that nasty refined sugar.

Roasted and salted cashews, ground ginger, and pitted dates

Everything you need to make these beauties can be found at your local supermarket and won’t cost the earth.  What’s more, they don’t require any baking, just a good food processor and a fridge.

I just love how the ginger adds a little warmth and kick whilst the cashews have that salty, creamy, crunchy thing going on…  Okay yes, my obsession with these Ginger Bites is next level but they are just so good!

I never thought I’d find a treat that would cure my red licorice addiction but these beauties did it.  Maybe that’s why I’m so OTT about them?  Whatever it is, I’m just so excited for you to try them and let me know what you think.

Ginger Bites

Makes around 40 bites

1 cup roasted and salted cashews

2 cups pitted dates

1 tsp ground ginger

Method:

  • Grab yourself a 20cm x 30cm rectangle baking pan and line it with baking paper.  Set aside.
  • Place your cashews, dates, and ground ginger into a food processor and blend on high until you get a sticky consistency.  You will probably have to scrape the mixture off the side of the food processor a couple of times during the process. It can take a few minutes to get the consistency you want so be patient.  Note: It might be tempting to blend until the cashews are totally smooth but I think the bites taste far better with little crunchy bits of cashew throughout. 
  • With slightly damp hands (this makes it easier to work with the mixture) empty the entire contents of the food processor into the lined baking pan.  Then flatten the mixture out evenly with your hands along the base of the pan.
  • Pop the whole thing in the fridge for at least 4 hours or until the Ginger Bite mixture is quite firm.  Now, turn it out onto a chopping board and with a sharp knife cut into bite-size squares.
  • Store in the fridge.
