I’ve got to say, this dressing is definitely a favorite of mine. I’ve featured it on several post, like here, and here not to mention it’s had a staring role in countless meals at my house.
That’s why when I decided to do a Salad Dressing series on the blog I just new my Bright and Creamy Lemon Dijon Dressing needed a feature. It’s such a great introduction to do-it-yourself dressings. In particular:
- it’s creamy and tangy,
- got chilli flakes for a little extra kick
- cheap and easy to make
- infinitely more nourishing than store bought dressing
- keeps well in the fridge

Bright and Creamy Lemon Dijon Dressing
Makes around 1/2 cup dressing
2 tbs olive oil
the juice of 1 lemon (plus the zest of 1/2 the lemon)
3 tsp dijon mustard
a pinch of salt
1/2-1 tsp chilli flakes
Method:
- Place all the ingredients into a small, clean glass jar.
- You can either pop the lid tightly on and give the whole thing a great big shake or mix with a small whisk until combined and deliciously creamy.
- Now have a little taste – add more seasoning here if you think it needs it.
- Best to leave the dressing to sit for at least 15 minutes. This allow the flavours to develop and blend, giving you a super tasty dressing.
