Marinated Portabello Mushrooms

A few weeks back I posted the above pic to Instagram.  This dish was my take on a Big Breakfast and was a hit at our place.  I’ve already given you the deets on the salad and sweet potato components but I left my favorite ’till last.  My Magnificent Marinated Portobello Mushrooms are delicious and dead easy to prepare.  Did I mention they’re delicious?  Oh my goodness you have to make them!

Portobello MushroomsNow, I know you’re used to seeing our friend the portobello mushroom either stuffed with something cheesy or masquerading as a beef patty in the veggie classic, Mushroom Burgers: The Musical but I want to show you just how versatile this mushie can be.

All it takes is a few simple ingredients. What’s more, you probably already have them lying around the kitchen! Then you can create a dynamic, interesting dish that will not only spruce up your veggie plate but works really well as a side for our meat eating friends.

Marinated Portabello Mushrooms3The secret is in the marinade.  The trick is to let them sit for as long as you can before popping them in the oven – at least 1 hour.   Mushrooms are incredibly porous and will drink in all those lovely flavours leaving you with a deliciously sticky, chilli, salty-sweet vibe that is out of this world.

Marinated Portabello Mushrooms on oven tray ready to bakeBelieve it or not, I wasn’t really a fan of mushrooms when I first became a vegetarian.  All the mushies I’d ever tried were either dripping in cream or covered with cheese and butter. That’s never really been my thing.

The breakthrough for me came once I realised you can roast those bad boys. This improves both the flavour and the texture.  Add my magnificent marinade on top and you’ve got one happy veggie – meaning me the vegetarian not the mushrooms. 😉

Magnificent Marinated Portobello Mushrooms

Serves 2 (as a side dish)

4 medium/large portobello mushrooms (wiped with a damp cloth and sliced)

1-2 cloves garlic (minced)

1/2 tbs Olive oil

1 tbs Tamari sauce (gluten free soy sauce)

2 tsp sweet chilli sauce

Method:

  • Place all your ingredients into a large glass bowl and mix gently with your hands so each slice of mushroom is covered in the marinade.
  • Set aside for at least 1 hour – 2 hours is ideal.
  • When you’re ready to cook your mushrooms, pre heat the oven to 190C (fan-forced) and line an oven tray with baking paper.
  • Evenly spread your marinated mushrooms out over the oven tray.  Pop them in the oven for around 15-20 minutes or until the marinade has caramelised and your mushroom pieces have halved in size.
