Let me tell you about a mum who decided she would make all her child’s treats from scratch. No packaged, processed, refined-sugar laden goodies for her child, no sir! There was only one problem with this noble plan, the kid never liked any of the treats I made… That was until these Raw Vegan Brownies.
Okay yes, clearly this well intentioned idealistic mother was me. And although I was a little hurt by all the rejection at first (didn’t he know how much love and effort I put into that puffed rice and coconut square – LOL ) what I’ve come to realize is that balance is the key. Which is just as well because I’m pretty cr*p at making sweets.
That was until I came across these Raw Vegan Brownies. With only a handful of ingredients that you just bung into the food processor and no baking time it’s the type of treat I love to make. Both because it’s easy and so, so yum.
The funny thing is, the first time I made these brownies I didn’t have the kid in mind. I’d stopped trying to make him eat my homemade treats ages ago. But I have a sweet tooth and refined sugar is not my friend (as I’ve mentioned before) so I thought they might hit the spot. I also loved how the gooey sweetness comes from the humble prune.
Easy to find and cheap to buy, prunes are packed full of fiber and potassium.
So… healthy treat – yay! What’s more, everyone in the house loves them. Especially the kid. He actually asked me to make them for him the other day!?! I’m still trying to recover from the shock. 🙂
Truly Scrumptious Raw Vegan Brownies
Makes around 15 – 18 brownie bites
1 x 200g pack pitted prunes
1/2 cup dry roasted almonds
3 tbs cacao powder
4 tbs almond butter (find recipe here)
2 tbs agave syrup
Method:
- Line a 20 x 20 baking tin with baking paper and lightly grease with coconut oil.
- Next, blitz your roasted almonds in the food processor. You just want to use the pulse function a couple of times to roughly chop them. Alternatively, you could do this using a knife. Put the chopped almonds to one side.
- Now put the rest of the ingredients into your food processor and mix until combined.
- Remove the blade from the food processor then add your chopped almonds to the brownie mixture. Using a spoon, gently mix the almonds through until evenly distributed.
- Turn your brownie mixture out into your greased/lined baking tin. Using your hands, press the mixture down firmly.
- Chill the mixture in the fridge for at least a couple of hours or until firm. Leave in the fridge overnight for best results.
- Turn out of tin and cut into 18 squares. Keep your brownies stored in an air tight container in the fridge.
