Super Simple Granola

What do you like to eat for breakfast? Everyone has their go-to don’t they?  I’m normally a fruit and nut kinda gal but the other day I decided to experiment with homemade Granola. I have to tell you, it was a revelation!  Crunchy, tasty, and sweet, my Super Simple Granola is a great way to start your day.

oats, pepitas, sunflower seeds, and almondsI adore porridge, this is why I always have oats in the house.  But I had a whole heap of nuts and seeds that I really wanted to use up so I thought I’d experiment with Granola for a change.  I mean, how hard can it be to make your own Granola right?

Use whatever nuts and seeds you have to hand, a bit of coconut oil, some maple syrup and, of course, some rolled oats.  Mix them all together and pop them in the oven.  That’s why I called this recipe my Super Simple Granola.  Because it truly is! 🙂

Granola mix in the try ready to bakeJust wait until this mix starts toasting in the oven… Your whole house will smell divine.  Just be sure to wait until the very end to mix through your dried fruit.  I tried adding it in the beginning and it just burnt far too quickly.  I also live in a house with people who hate sultanas so I only ever use dried apple.  But you do you.

My Super Simple Granola is great with your favorite plant-based milk or sprinkled over coconut yogurt for a deliciously satisfying breakfast that will keep you going until lunch. You must give it a go and let me know what you think. xx

Super Simple Granola

Makes about 3 cups

2 cups rolled oats

1/2 cup of roasted almonds (roughly chopped)

1/4 cup pepitas

1/4 cup sunflower seeds

1/2 cup coconut oil

1/2 cup maple syrup

1 tsp ground cinnamon

1/2 tsp sea salt

a handful of roughly chopped dried apple

Method:

  • Pre heat your oven to 160C and lined an oven tray with baking paper.
  • In a large mixing bowl combine the coconut oil (heat it gently over the stove to melt if needed) and maple syrup, then add all other ingredients except for the dried fruit.
  • Spread the mixture out evenly over the baking paper-lined oven tray and press down with the back of a spoon.
  • Put the granola in the oven and cook for 15 minutes.  At the 15 minute mark, take the granola out and stir, and put it back in the oven for another 10 minutes
  • The granola is ready when the oats and nuts are a lovely golden brown colour.
  • At this stage, take it out of the oven and place on a wire rack to cool.  Sprinkle over the dried apple then press down the granola one more time before it cools.  This will give you those lovely granola chunks.
  • Cool completely before storing in a clean, air-tight container in the cupboard.
