The idea for these scrumptious Black Bean Veggie “Meatballs” came to me by accident. The kid had a hankering for spaghetti and meatballs and I had some cooked black beans in the fridge. So, I did what any self-respecting home cook would do, I threw in a little bit of this and a pinch of that and voila! my veggie meatballs were born.
Burrito bowls are the best weeknight or meatless Monday veggie option. I think it’s because they’re super quick to throw together, whist also being nourishing and delicious. That’s why I’m so pumped to share this Epic Black Rice Burrito Bowl with you today. The bright, fresh flavours of the veg combined with hearty black beans and rice makes for a super yum combo. I love Melbourne in Autumn. Although we still have the occasional warm and sunny afternoon, the mornings are dark, cold, and foggy. The last hints of summer are well and truly over. It’s time to brace ourselves for the colder months to come.
