My quick and easy Smashed Peas are nutritious and super yum. They’re perfect as a dip for when friends come around or spread on your toast for a scrumptious savory brunch. You just won’t believe how easy it is to make such a delicious spread!
One of the things I love about home cooking is when an off-the-cuff dish turns into an absolute winner. Case in point: my Sensational Spinach Pea and Rocket Salad. Bursting with flavour, pretty to look at, and oh-so-easy to throw together this salad is a must at your next picnic, BBQ, or potluck.
Okay friends, this Epic Roast Potato Power Bowl is super scrumptious, not to mention incredibly easy to prepare! It’s a great example of how everyday ingredients can create a cracking plant-based meal.
It finally feels like Springtime in Melbourne. The bright warm sun and smell of jasmine in the air makes me so happy. Kind-a like my Baby Pea and Butter Bean Soup. Bright would be the perfect way to describe it. Along with nourishing and delicious. Really, is there anything better than home-made soup?
Ahh the humble carrot. Those veggies we all buy and leave sitting in the back of the fridge. They’re cheap and they last ages but let’s be honest, who’s really rushing home from working all excited about the carrots they’re going to have for tea? Until there’s nothing left to eat and you look at that bag of bright orange root vegetables shaped like a giant’s fingers and think to yourself, “Well, I guess it’s time to eat some carrots.”
How do you feel about supermarket shopping? Most people I know find it a chore but I really enjoy it. For me, supermarket shopping is that one time I can spend money and not feel guilty or wasteful. Having said that, there are times it feels like one extra job I simply can’t fit in. I mean, I try to do that one big shop a week that covers everything but sometimes life gets in the way. Not to mention my people are big eaters. Don’t they know that the milk/eggs/bread was supposed to last 7 days not 3?
When people come to dinner at my place I like to have a home-made dip ready to serve with drinks. It’s a great way to relax into the evening and allows you a little extra prep time for your main meal. I have several dips I alternate between but I wanted to share this one with you today because of it’s festive vibe. Unexpected, vibrant, and incredibly tasty, this Smashed Peas with Almonds and Chilli is a real show stopper.
