I love entertaining during the holidays. Who am I kidding – I enjoy having people ’round at any time of the year! And I always make sure there is a cold drink and homemade dip to greet my guests. Making dip from scratch is a lot simpler than you might think. What’s more, they can be made ahead of time. That means more time with family and friends. The following 3 dips are always devoured within minutes at my place. The perfect holiday season starters!
Romesco Dip
Roasted red capsicum reminds me of my childhood. I love how it makes the whole house smell sweet and smokey. So when I discovered the fabulous Romesco Dip I knew I had to make it. The combination of crunchy almonds, roast capsicum and paprika always has my guests coming back for more.
Quick and Easy Hummus
What can I say about Hummus that hasn’t already been said? It’s delicious, totally nutritious and super simple to prepare if you use tinned chickpeas (which I always do). I know you can buy hummus at the market but trust me when I say it’s never as tasty as homemade. Especially when you’re using my fool-proof recipe. Just make sure you use a small piece of garlic in the mix. Raw garlic can be really overpowering and definitely develops in intensity over time so don’t be fooled if you can’t taste it straight away. It’s in there. 🙂
Spinach and Macadamia Nut Pesto
Okay, so technically this is a pesto but man, it tastes so good on crackers and veggie sticks. The vibrant, earthy green spinach combines perfectly with the mellow sweetness of the macadamia nuts . A match made in heaven!
