Totally Awesome Overnight Oats

We all know how important it is to have a good breakfast.  But some mornings, sorting out a nutritious brekkie can seem near impossible. That’s why I love these Totally Awesome Overnight Oats.  You simple pop all the ingredients into a jar before you go to bed.  I’m not kidding, a super yummy, healthy breakfast is that easy!

Rolled oatsMost mornings I like fruit and nuts for breakfast.  As I’m not the best morning person, often that’s about all I can manage – that, and a strong cup of coffee. 😉  But if I know I’m going to have a long day then I will prep some of these bad boys the night before.

Frozen raspberriesWhat I love about these Totally Awesome Overnight Oats is not only are they really easy to throw together but they’re delicious hot or cold.  What’s more, they’re really versatile too.  You can top them with fresh or frozen fruit, nut butter, seeds, you name it.

My absolute favorite way to have overnight oats at the moment is with some frozen raspberries, almond butter, and pepitas – so good!  Give them a go this week and let me know what you think. xx

Totally Awesome Overnight Oats

Serves 1

1/2 cup rolled oats

3/4 cup plant-based milk (I like Vitasoy Rice Milk)

2 tsp maple syrup

Your choice of fruit, seeds, and/or nut butter to serve ( I’m loving my Almond Butter on this at the moment.  You can find the recipe here)

Method:

  • Grab yourself a bowl or a jar and combine the oats, milk, and maple syrup.  Stir gently, then cover and put in the fridge overnight or for at least 4 hours.
  • When you’re ready to eat them, take your overnight oats out of the fridge, top with your favorite fruit and nut/seed combo.  Enjoy!
