How are you staying connected during these strange times? So many of my friends and family have embraced the “remote catch-up”. Yoga classes, book clubs, girls night, virtual bingo, all you need is decent internet connection and a webcam and you’re in for a treat. And just because you’re not all in the same room, doesn’t mean you can’t serve some snacks. Even if you’re the only one who’ll eat them. I made these delicious Vegan Cucumber Sandwiches the other day for my book club get-together and they were soooo good.
I can’t tell you the last time I had a cucumber sandwich. But when my good friends at Edlyn Foods hooked me up with their delicious Woods Vegan Mayonnaise I suddenly had the biggest craving for them!
Now, there are many different ways to make a cucumber sandwich but my favorite way (like with most things) is always the simplest. I really do think things taste yummiest when you let the natural flavours shine. Fresh cucumber, a killer vegan mayo and that’s about it really. No need to re-invent the wheel. Honestly, it’s my favorite.
Now more than ever it’s really important to stay connected with friends and family. A little plate of Vegan Cucumber Sandwiches left on a door step is a simple gesture that can mean so much. I’ve always found sharing food with the people I care about is one of my greatest joys. And you know, these wonderful creamy triangles would work a treat for the kids’ school lunches too.
Whatever the occasion, be it a picnic or a casual catch-up over a cuppa – you name it, make sure you keep these Vegan Cucumber Sandwiches in mind. I just know you’re going to love them. xx
Vegan Cucumber Sandwiches
Serves 4
8 slices white bread
2 small Lebanese cucumbers (thinly sliced)
2/3 cup Woods Vegan Mayonnaise
the juice of 1/2 a lemon
1 tsp dried dill
salt and pepper to taste
Method:
- in a small bowl, combine the vegan mayonnaise, lemon juice, dill, salt and pepper. Gently mix until combined. Set aside.
- Lay out your bread on a clean surface in two rows of 4.
- Generously spread the mayo mixture onto each slice.
- Now, carefully layout the thinly sliced cucumber onto 4 of the slices of bread.
- Place the mayo covered bread on top of the cucumber bread, face down, to make a sandwich. You will now have 4 square sandwiches.
- One by one, using a sharp knife cut the crust off each sandwich. Then cut them in half diagonally, and then cut each of those halves diagonally. Each square sandwich will give you 4 small triangles.
- Serve your sandwiches sitting upright on a cute plate. Enjoy!!
