Fancy Banana and Strawberry Porridge

May 10th is Mother’s Day here in Australia.  Not gonna lie, since having the kid it’s hands down my favorite day. A typical Mother’s Day for us starts out with The Mother’s Day Classic, a charity fun run, we then go for brunch, and finally pop in to my Mum’s house.  It’s such a lovely day that fills me with gratitude and wonder.  It is going to look slightly different this year because of social distancing but we’re still going to celebrate in our own special way.  And that includes my Fancy Banana and Strawberry Porridge.

Fancy Banana and Strawberry PorridgeOrdinarily we would be up and out of the house really early to make our fun run start time.  To be honest, every year I wonder why I thought it would be fun to get up at the crack of dawn on a rainy cold Sunday.

It goes something like, “Who’s idea was this?  Oh that’s right, it was mine.” Haha

So basically, in years past we haven’t had time for a fancy breakfast.  But not this year.  We’re still going to do our run for charity but we’re going around our neighborhood at a socially responsible distance.  I’ll be documenting it on Instagram.  Make sure you head over there on Sunday and check it out. 🙂

Now, back to the porridge! It’s easy to show mum you care this Mother’s Day with a delicious bowl of my Fancy Banana and Strawberry Porridge.  I love the combo of fruit and crunchy pepitas and my favorite cashew butter – so dreamy.  Not to mention super easy to make.

Fancy Banana and Strawberry Porridge

Serves 2

1 cup rolled oats

2 cups plant-based milk (I like Vitasoy rice milk)

a small banana (sliced)

6 fresh strawberries (sliced)

2 tsp pepitas

1 tbs cashew butter

2 tsp maple syrup

Method:

  • Combine the oats and milk in a medium-sized pot. Put them on the hob on a medium heat.  Gently bring to the boil being careful not to burn the milk.
  • Reduce the heat and stir gently for around 10 minutes or until the oats have absorbed most of the milk and softened in texture.
  • Divide the porridge between 2 bowls and top with the fruit, pepitas, cashew butter and maple syrup.  Enjoy!
