Quick Kale and Mushroom Pasta

By now you would have heard the news… We’re all stuck inside with a whole lotta pasta.  So what do you do when life gives you lemons (or in this case, pasta)?  Make my Quick Kale and Mushroom Pasta of course!

kale leaves, olive oil, and sea saltThese are strange times, how are you coping with it all?  Things have definitely been a little quite around here lately.  The global health crisis has thrown us all for a loop.  Projects I had in the works for 2020 have had to be put on hold.  I’ve gone back to work full-time.  There’s been some heavy personal stuff going on.  All this has made it difficult for me to remain consistent on this platform.

Assorted mushrooms The thing is, I love this blog.  Call me crazy but I really do love cooking and talking about food.  I can’t tell you how happy it makes me when I hear you’ve tried one of my recipes.

So we soldier on. I know I will figure out how to fit everything in. Now, back to my pasta!  This Quick Kale and Mushroom Pasta is the perfect mid-week meal.  Those nights you’re looking in the pantry thinking, “There’s nothing to eat in this house!”  You know, we’ve all been there.

This dish has all my favorite home-cooking elements:

  • quick and nourishing meal
  • can be made using store cupboard staples
  • light but satisfying
  • perfect for when you want dinner curled up on the couch

I like to finish mine off with some home made vegan Parmesan but you can use regular cheese if you like.  Whatever floats your boat. 😉

Quick Kale and Mushroom Pasta

Serves 2

250g uncooked spaghetti

4 cups kale leaves (torn into bite-size pieces and washed)

2 cups of sliced button mushrooms

1/2 cup split green olives

1 tbs olive oil

1 tsp chilli flakes (optional)

Method:

  • Cook your pasta according to packet instructions
  • While your pasta is boiling, heat your olive oil in a large frying pan.  Add your mushrooms and saute until all the liquid has evaporated.
  • Now add your kale to the pan and gently mix through. It will look like there’s too much kale but don’t worry – it reduces in size as it cooks. Keep cooking until the kale becomes crispy.
  • At this stage, your pasta should be ready.  With tongs, transfer the hot pasta directly from the pasta water into the frying pan with the mushrooms and kale.  Don’t worry if you get a little of the pasta water in there – this is desirable as the starchy pasta water creates a bit of a sauce.
  • Gently mix the pasta through the mushroom and kale mixture.  You can add the chilli flakes now if you wish.
  • Divide between two bowls and add the green olives to finish
