How are you staying connected during these strange times? So many of my friends and family have embraced the “remote catch-up”. Yoga classes, book clubs, girls night, virtual bingo, all you need is decent internet connection and a webcam and you’re in for a treat. And just because you’re not all in the same room, doesn’t mean you can’t serve some snacks. Even if you’re the only one who’ll eat them. I made these delicious Vegan Cucumber Sandwiches the other day for my book club get-together and they were soooo good.

I’ve also been known to load them up with my favorite toppings for a scrumptious game night or movie marathon snack. So good!

I just love this time of year and all the traditions that come with it. Sending Christmas cards in the mail (yeah, I’m old-school like that 😉 ), putting up the tree, planning the Christmas feast, and the family coming together. Another tradition in my house during the holiday season are these Ginger Snap Cookies. A delicious, ginger-y cookie that’s not too sweet and super simple to make. Yes please!
