Sweet Potato Fries

There are some things you just shouldn’t keep to yourself.  Take my Sweet Potato Fries for example.  Salty, sweet, and crunchy, they’re the perfect side for a variety of dishes – veggie or otherwise.  Having said that, these delicious rods of sunshine don’t have to be regulated to a supporting character role.  I’ve also been known to load them up with my favorite toppings for a scrumptious game night or movie marathon snack.  So good!

A member of the root vegetable family, sweet potatoes are packed full of nutrients and slow burning energy.  This makes them a favorite for health food lovers everywhere.

Sweet potatoes are a no fuss, inexpensive veggie that are easy to find, yummy and super versatile.  Their sweetness lends them to all different kinds of dishes. I’m talking, baked goods, hearty salads, soups, and pizzas.  Honestly, is there anything sweet potato can’t do?

Olive oil, black pepper corns, rosemary, and salt

This has to be one of my favorite ways to prepare sweet potato because you get maximum taste for minimum of fuss.  Olive oil, salt and pepper is really all you need to create a moreish side then the rosemary… Sprinkling some of those pungent green spears onto your tray before you pop the fries into the oven makes the whole kitchen smell heavenly.  What’s more, they give a depth of flavour to your sweet potato fries that makes them feel a little fancy.  Fancy fries?  Yeah, life is good people. 🙂

Sweet Potato Fries

Serves 4 (as a side)

2 small/medium sweet potatoes

2 tbs olive oil

1/4 cup fresh rosemary spears

salt and pepper to taste

Method:

  • Preheat your oven to 200C (fan forced) and line a large oven tray with baking paper.
  • Leaving the skin on, give your sweet potatoes a good scrub under a cold, running, tap then pat dry with some kitchen towel.
  • Cut the sweet potato in half, then in half again.  Now cut them into fries.
  • Spread your fries out evenly onto the oven tray.  Drizzle with olive oil, then add the salt, pepper, and rosemary spears.
  • Roast in a hot oven for around 35-40 minutes.
