Over the last couple of weeks while Melbourne has been in lockdown I made a promise to myself to eat well. “Don’t you always eat well?” you may ask. Mostly, but it’s easy to be lazy when working from home. This Quinoa and Broccoli Salad was a lunchtime life-saver. Delicious and satisfying, it saved me from snacking all day.
The idea behind this salad, was to have a whole heap of delicious stuff prepared that I could throw together at lunchtime. Some might call it meal-prep, but I like to call it a no worries lunch.
Not only is this salad delicious but it’s both light and satisfying. This means you get all the nutrients without feeling like you need a siesta afterwards.
Now, I know some people find meal-prepping laborious but for me, spending a little time the night before my working week preparing lunch means I can get on with my day. I love knowing I have a scrumptious meal waiting for me in the fridge. You won’t believe how easy it is to make your own gourmet, plant-based power lunch at home!
Of course, you could make this salad any old time. It would be great to take to a BBQ or even Potluck. But don’t just take my word for it, give it a go yourself and let me know what you think.
Quinoa and Broccoli Salad
Makes enough for 4 lockdown lunches 😉
2 cups steamed broccoli
a packet of mixed lettuce leaves
1 cup cooked quinoa
1/4 red onion (sliced)
2 medium carrots (cut into matchsticks)
1/2 cup roasted almonds (roughly chopped)
a jar of my Lemon Dijon Dressing
Method:
- Take 1 serving of the broccoli, lettuce, quinoa, red onion, and carrots and arrange them on a plate.
- Sprinkle 1 serving of the roughly chopped roasted almonds on top.
- Finally, drizzle around half a tablespoon of the Lemon Dijon Dressing.
