Burrito bowls are the best weeknight or meatless Monday veggie option. I think it’s because they’re super quick to throw together, whist also being nourishing and delicious. That’s why I’m so pumped to share this Epic Black Rice Burrito Bowl with you today. The bright, fresh flavours of the veg combined with hearty black beans and rice makes for a super yum combo. I know what I’m having for dinner tonight. 😉
These Vegan Tuna Potstickers are totally delicious and super easy to create! They make great nibbles for when friends come around for drinks. Everybody loves these little beauties.
There’s just no getting around it. Being the only veggie in the house means sometimes, I have to make two separate meals for dinner. My Deliciously Versatile Roast Eggplant Tray means my reality doesn’t have to be a pain in the @r$e. Nourishing, comforting, and delightfully tasty, this dish is a real winner when faced with those weeknight conundrums.
One of the places people have the most trouble when trying eat better is lunch. I can totally relate. Not being a morning person the last thing I want to worry about is creating a culinary masterpiece to take to work. Besides, there are more important jobs like making sure the kid’s sorted for his day and de-zombifying myself (told you, not a morning person 🙂 ). That’s where my Vegan Waldorf Salad Wrap comes in handy. Each component is easy to prep ahead of time and keeps well in the fridge. A delicious and satisfying lunch in a pinch for several days in a row. Done and done. ✔
I am obsessed with porridge at the moment. Firstly, I love how something as simple and inexpensive as oats can create an abundance of nourishment. On top of that, it’s just so incredibly versatile. You can have a bowl of porridge every day and never get bored. I mean, the flavour combos are endless. Take my Vegan Plum and Coconut Porridge for example. A scrumptious mix of nutty and sweet, crunchy and smooth, this bad boy is nourishing, easy to make, and super tasty. Yes please!
There are some things you just shouldn’t keep to yourself. Take my Sweet Potato Fries for example. Salty, sweet, and crunchy, they’re the perfect side for a variety of dishes – veggie or otherwise. Having said that, these delicious rods of sunshine don’t have to be regulated to a supporting character role. I’ve also been known to load them up with my favorite toppings for a scrumptious game night or movie marathon snack. So good!
What’s cooking you ask? You know how it goes, some weeks I feel like I could take on the world whilst others… I absolutely love cooking and sharing my recipes here with you all but for some reason this week, I honestly felt like I had nothing to say. Like I’d used up all my words or something. And do you know what’s even weirder? I didn’t really feel guilty about it. For example, normally if I’m a little pressed for time or unprepared for my Monday post I will totally stress out. I’m not quite sure what I think will happen but I made a commitment to myself when I started this journey. Plus, I am a girl who likes routine.
These Cranberry Bliss Balls are sweet, chewy, and moreish. Perfect with a cuppa or in a lunchbox. What’s more, it only takes 4 ingredients to make yourself a delicious treat that’s also good for you. Yes please! 🙂
This Roast Pumpkin Salad with Sunflower Seeds and Balsamic Glaze is a real winner. It’s a harmonious combo of flavours and textures. What’s more, this is a salad that tastes amazing on it’s own or as a side dish. So, let’s get into it! 🙂
