Introducing my Maple Roasted Brussels Sprouts!  In my experience, Brussels sprouts often get a bad wrap.  Check out any kids movie or book and you’ll be sure to find some child wincing at the sight of them or secretly trying to feed them to the dog.  I mean, I was reading a book of short stories to the kid once and there was an entire story devoted to the avoidance of these little green gems. Truthfully, it was really funny but that’s besides the point.  Brussels sprouts are not the enemy people!  In fact, I’d like to think they’re the unsung hero of the veggie world… too far? 🙂

One of the places people have the most trouble when trying eat better is lunch.  I can totally relate.  Not being a morning person the last thing I want to worry about is creating a culinary masterpiece to take to work.  Besides, there are more important jobs like making sure the kid’s sorted for his day and de-zombifying myself (told you, not a morning person 🙂 ). That’s where my Vegan Waldorf Salad Wrap comes in handy.  Each component is easy to prep ahead of time and keeps well in the fridge.  A delicious and satisfying lunch in a pinch for several days in a row. I am obsessed with porridge at the moment.  Firstly, I love how something as simple and inexpensive as oats can create an abundance of nourishment.  On top of that, it’s just so incredibly versatile.  You can have a bowl of porridge every day and never get bored.  I mean, the flavour combos are endless.  Take my Vegan Plum and Coconut Porridge for example. There are some things you just shouldn’t keep to yourself.  Take my Sweet Potato Fries for example.  Salty, sweet, and crunchy, they’re the perfect side for a variety of dishes – veggie or otherwise.  Having said that, these delicious rods of sunshine don’t have to be regulated to a supporting character role.  I’ve also been known to load them up with my favorite toppings for a scrumptious game night or movie marathon snack.  So good!
