It’s Monday and you’re wondering what to cook for the family. You want something easy, cheap and nourishing, right? I mean, who doesn’t? This Baked Sweet Potato topped with Lentils and Crispy Kale is sure to hit the spot!
What’s cooking you ask? You know how it goes, some weeks I feel like I could take on the world whilst others… I absolutely love cooking and sharing my recipes here with you all but for some reason this week, I honestly felt like I had nothing to say. Like I’d used up all my words or something. And do you know what’s even weirder? I didn’t really feel guilty about it. For example, normally if I’m a little pressed for time or unprepared for my Monday post I will totally stress out. I’m not quite sure what I think will happen but I made a commitment to myself when I started this journey. Plus, I am a girl who likes routine.

The Holiday Potluck seems to be all the rage this time of year. And that’s cool with me ’cause you know I love to cook. 🙂 Whether is a work function, family do, or get-together with the girls my favorite thing to make for a potluck has to be a great big salad. That’s because they’re super easy, look impressive, and taste delicious. Take my Roasted Beetroot Salad with Feta and Walnuts for example. The contrast of the colours and textures means it won’t get lost among the dips and chips and the flavours will have your work colleagues asking, “Can I get the recipe?”.
